What is Gluten?

Many people get confused by the meaning of gluten. Gluten is a proteins, found in wheat, barley, oats and rye. Gluten in wheat (and wheat flour) gives elasticity to dough helping it to rise and keep its shape and gives the final product (chapattis) a chewy texture. Some percentage of people (and children in particular) are sensitive to the gluten means they are allergic to wheat and wheat producs. Consumption of gluten diet  or say wheat products makes the gluten-sensitive adults suffer from disorders like: Digestive Problems, Diarrhoea, Stomach Pain, Joint Pain, Migrain and Infertility. Gluten-sensitive children suffer from slow growth or are slow to gain weight – a condition called “failure to thrive”.

This inability to prevent a person’s body from digesting gluten is diagnosed as the “Celiac Disease” – an auto immune disease.

Studies show that the occurrence of the celiac disease is slowly spreading in all the parts of the world, including India.
